This is how you do it
Salt and pepper the chicken. Heat up some oil in a frying pan. Place the chicken in the pan and cook for 8-10 minutes per side. Spread pesto on the bread slices. Slice chicken, mozzarella, bell peppers and basil and place on one bread slice. Sprinkle salt and pepper and put the second bread slice on top as a lid. Grill the toast over open fire in a GrandPa's FireGrill. Serve with a rocket and tomato salad.
