Mix the dough and let it rest for two hours. Knead and place the dough in a MealKit. Let rise overnight. Ready to bake.
Slice eggplant into 1 cm-thick slices. Remove liquid by sprinkling each slice with salt in a StackPlate, for example. Let sit for about 10- 15 minutes. Dry the slices and fry them in olive oil. Remove and keep warm. Fry the sage in olive oil, then remove from heat and keep warm.
Roll out and cut the dough into bite sized pieces. Spread them on a griddle or a frying pan. When they are finished baking on one side, flip the pieces and spread each with ajvar relish. Add the slice of eggplant, sage, and top with mozzarella cheese. Sprinkle with pepper. Eat. Enjoy.
